This specific offering comes from the¬†Yaye¬†Washing Station, located in Ethiopia’s Sidamo region. After cherries are purchased from local producers, the cherries are soaked in a water tank for two hours and the defective, floating cherries are removed. Cherries are then placed directly on raised beds with a specific thickness of cherries to ensure an even drying process. The raised beds here are in a location that allows wind to blow through the coffee and more limited sunlight due to slight shade and the use of shade nets. Coffee is dried on these beds while moved multiple times a day for an average period of 30 days


The cup is sweet and savory with tart acidity; jasmine, blackberry, grapefruit, caramelized sugar, and dark chocolate flavors.
