Our dark roast is a blend of three diverse coffee origins, each contributing uniquely to the rich, sweet, and savory flavor of our deepest roast. Because the process takes longer and goes through a greater number of chemical reactions than our light roasted single origin offerings, we felt that the journey to the dark side would go best when the beans had some companions. The dynamic of roasting includes not only transforming sugars into caramels, but also the release of steam energy, and at this level, a precise degree of pyrolisis. With these three coffees each having a very different roasting dynamic, the roast process not only progresses more smoothly by their collaboration, but finishes with a greater complexity in the cup.
